Ingredients (dry)

  • 2 cups almond flour
  • (1/2 cup almond meal, optional)
  • 1/2 cup flax meal (ground seeds)
    • substitute with 1/2 cup tiger nuts
  • 3 Tbsp sesame seeds
  • 2 Tbsp dried onions (flakes)
  • 1/2 cup parmesan cheese
  • 1/4-1/2 tsp salt (pink or sea)
  • 2 Tbsp artichoke inulin (or chickory root)
  • 1/2 tsp baking soda (optional)

Ingredients

  • 1 large egg
  • 2 Tbsp oil
  • 1/2 cup water

Directions

  1. mix dry ingredients
  2. mix wet ingredients
  3. combine dry with wet ingredients
  4. divide in half
  5. place one half on sheet parchment paper
  6. cover with plastic wrap to prevent from sticking to fingers or rolling pin
  7. flatten between parchment and plastic wrap, flatten to round or rectangular
  8. flatten to 1/4-1/8in thick
  9. remove plastic wrap
  10. leave dough on parchment paper
  11. cut into little cracker squares with pizza cutter
  12. sprinkle with sesame seeds, salt, if desired
  13. bake 300 F, 30 minutes until light brown or firm
