Ingredients (dry)

  • 1/2 cup almond flour
  • 1/2 cup tiger nuts
  • 2 Tbsp inulin powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Ingredients (wet)

  • 2 oz butter (salted or plain, preference)
  • 1 egg
  • 1/2 tsp vanilla

Ingredients

  • 28g dark chocolate chips or chopped
    • 70% Theo dark chocoloate w/ sea salt (14g total carb, 8g net carb)

Directions

  1. beat egg white to soft peaks (optional)
  2. melt/soften butter
  3. mix dry ingredients
  4. include egg yolk with other wet ingredients (optional)
  5. mix wet ingredients
  6. combine dry with wet ingredients
  7. add chocolate chips
  8. parchment paper on baking sheet
  9. spoon onto parchment paper
  10. flatten to 1/4-1/2in thick, preference
  11. refrigerate for 10-15 minutes (or longer, overnight, etc)
  12. preheat oven to 325 F
  13. bake at 325 F for 12 minutes, add time until bottom is golden

Variations

  • leave out chocolate chips
  • add 1/2 cup pecans
  • add 1/2 shredded coconut
  • add cinnamon, ginger, nutmeg
