Ingredients (dry)
- 1/2 cup almond flour
- 1/2 cup tiger nuts
- 2 Tbsp inulin powder
- 1 tsp baking powder
- 1/2 tsp salt
Ingredients (wet)
- 2 oz butter (salted or plain, preference)
- 1 egg
- 1/2 tsp vanilla
Ingredients
- 28g dark chocolate chips or chopped
- 70% Theo dark chocoloate w/ sea salt (14g total carb, 8g net carb)
Directions
- beat egg white to soft peaks (optional)
- melt/soften butter
- mix dry ingredients
- include egg yolk with other wet ingredients (optional)
- mix wet ingredients
- combine dry with wet ingredients
- add chocolate chips
- parchment paper on baking sheet
- spoon onto parchment paper
- flatten to 1/4-1/2in thick, preference
- refrigerate for 10-15 minutes (or longer, overnight, etc)
- preheat oven to 325 F
- bake at 325 F for 12 minutes, add time until bottom is golden

- leave out chocolate chips
- add 1/2 cup pecans
- add 1/2 shredded coconut
- add cinnamon, ginger, nutmeg
