Ingredients (dry, mix first)
- 140g Almond Flour (1.5 cup)
- 1/4 tsp salt
- 1 Tbsp baking powder
- 1 Tbsp oat fiber
Ingredients (wet, mix second)
- 2 eggs
- 1/3 cup sour cream
- 60g butter (4 Tbsp)
- 75g cheese (1/3 cup) (cheddar suggested)
Directions
- Preheat the oven at 350F or 180C.
- In a bowl, mix dry ingredients
- 140g Almond Flour (1.5 cup)
- 1/4 tsp salt
- 1 Tbsp baking powder
- 1 Tbsp oat fiber
- In a separate bowl, mix wet ingredients
- 2 eggs
- 1/3 cup sour cream
- 60g butter (4 Tbsp)
- 75g cheese (1/3 cup) (cheddar suggested)
- Mix wet ingredients into dry ingredients
- Drop onto onto parchment paper on baking sheet
- Bake at a low rack for 15 to 20 minutes
- during baking, the bottom may remain moist, transfer to wire rack and bake when solid enough to transfer
- Cool on a wire rack
Notes and References
- Oat fiber is for taste, it can be replaced with more almond flour
Goes well with gravy.
- Brown 1 pound of sausage
- In a bowl, mix
- 2 Tbsp keto pancake mix
- 1 1/2 cup half-half or other similar milk
- Add milk mix to pan of browned sausage gravy
- Heat until thickens
