Ingredients (crust)

  • 1 cup almond flour
  • sweetener
    • 2 Tbsp inulin
    • 2 Tbsp erythritol (or allulose)
    • (stevia)
  • 3 Tbsp butter, softened
  • 1/2 tsp vanilla

  • 1/4 cup almond flour
  • sweetner
    • 3 Tbsp inulin
    • 1 Tbsp erythritol (or allulose)
    • (stevia)
  • 1 tsp gelatin
  • 1 tsp collagen
  • lemon zest, one lemon

Ingredients (filling, wet)

  • 1/4 cup butter
  • 1/3 cup lemon juice (or juice from one lemon used for zest)
  • 1/2 tsp vanilla
  • 2 eggs
  • 1 additional egg yolk

Directions (Crust)

  1. mix together dry ingredients
    • sweetner
    • almond flour
  2. add butter and vanilla to the mix
  3. line pan with parchment paper
  4. press mixture into parchment paper
  5. bake 350 F for 10 minutes
  6. set aside to cool

Directions (Filling)

  1. mix together dry ingredients
    • sweetner
    • almond flour
    • gelatin
    • collagen
  2. add lemon zest to mix
  3. set lemon zest mix aside for later
  4. in a stovetop pan, melt butter
  5. to the pan, add lemon juice
  6. to the pan, add vanilla
  7. to the pan, add eggs and yolk
  8. heat pan until thickened (curd)
  9. to the pan, add lemon zest mixture

  2. make filling
  3. add filling to crust
  4. bake at 350 F for 15 minutes
  5. cool, refrigerate
  6. enjoy
