- 1 tsp gelatin
- 1 tsp collagen
- lemon zest, one lemon
Ingredients (filling, wet)
- 1/4 cup butter
- 1/3 cup lemon juice (or juice from one lemon used for zest)
- 1/2 tsp vanilla
- 2 eggs
- 1 additional egg yolk
Directions (Crust)
- mix together dry ingredients
- sweetner
- almond flour
- add butter and vanilla to the mix
- line pan with parchment paper
- press mixture into parchment paper
- bake 350 F for 10 minutes
- set aside to cool

- mix together dry ingredients

- almond flour
- gelatin
- collagen
- add lemon zest to mix
- set lemon zest mix aside for later
- in a stovetop pan, melt butter
- to the pan, add lemon juice
- to the pan, add vanilla
- to the pan, add eggs and yolk
- heat pan until thickened (curd)
- to the pan, add lemon zest mixture

- make filling
- add filling to crust
- bake at 350 F for 15 minutes
- cool, refrigerate
